A "favorite" food any time of year is homemade Toll House cookies. I try not to make them too often for obvious reasons but, especially when provisions are low, they have a way of getting themselves made. This morning I decided the latest toll house cookie need had been gestating long enough and started rounding up the makings. But I had a problem that was threatening to abort the whole cookie-making process; I had no brown sugar.
Now normally this isn't much of a problem, I just "make" brown out of white sugar and molasses. But, although I knew I had some, I just could not find my molasses. Then tonight, after a nap of a few hours, I reached into the mouth of a beautiful, highly decorated old German beer stein and pulled out the bottle of molasses I'd so cleverly hidden there. Yuppers, a nice go on my part.
So now I've taken butter and eggs out to soften and warm and located a "chewey" choc chip cookie recipie through google so I can get baking in a while and have fresh baked cookies to go with some freshroasted coffee come midnight.
1 cup butter
1/2 cup white sugar
1 cup brown sugar
1 tsp vanilla
2 eggs beaten
2 1/4 cups all purpose flour
1 tsp baking soda
1 tsp salt
choc chips (I use 2 cups)
Cream butter and sugars, add eggs & vanilla. Blend in dry ingredients. Stir in choc chips. Drop on greased sheet.
