    Porkfat Rules Again!

    The Food Network is promoting Emeril's "Porkfat Rules Again!" at 8 p.m. (EST) Sunday.

    Time for some real cookin'!

    6HOUR ROAST PORK

    6 servings

    2T fresh sage
    2T fresh rosemary
    1 garlic cloves
    1Tfennel seed
    1 ½ T salt
    1T black pepper
    1T dry white wine
    1T olive oil
    6 lb.boston butt roast

    Preheat oven to 275. Blend herbs, garlic, salt/pepper in food processer til paste forms; add wine and oil and blend.
    Trim fat from pork; make 3 small cuts in each side of pork with small sharp knife and fill each with about 1 tsp. of paste. Spread remaining paste over pork; tie roast with string at 2 inch intervals.
    Put pork fat side up in roasting pan; roast 6 hours; remove and let stand 15 minutes.
