    Guidance needed for Chilli storage and recipe for chilli paste

    I have two chilli and two Habanero chilli plants with fruit(?) to harvest and store.
    What is the experienced and recommended method/s for storing and use over until the next season?
    Also, what recipes for Green and red chilli paste do you use and recommend from your experience.
    As always, I am grateful and appreciative of your wisdom.

    You can freeze them, or dry them. Drying is the usual method:

    "The Basic Method for Drying Chili Peppers
    Place on a plate or a wire rack in a dry, well ventilated room. You can also string the chilies up on string or thread and hang to dry. Within several weeks, you will have dried chili peppers and you can grind them up or use them as ornaments as desired." You can also use a dehydrator or do it in a low oven.

    My dad grew habaneros, which he dried mostly, but he always made habanero infused vinegar to use for cooking too. Just open a bottle of wine vinegar, stem and core some habenaros, pour out a bit of the vinegar, and then stuff the peppers into the bottle. He usually put in about 10 into a regular sized bottle of wine vinegar. You can leave the peppers in the bottle or remove them after about a month. Try it both ways to see what you like. Makes great spicy sweet & sour sauce!

    Be sure to wear gloves when handling the really spicy chilies and don't touch your face.

        Thank you Nurse, thank you Vjls.
        I selected the best fruit, cut the stem and drove the knife blade through before drying in the EasyCook air cooker.

        I borrowed the wife's coffee grinder and set about grinding the chilli, seeds and all, how Iike it.
        I do cook & process my tomatos the same, with skin and seed, no waste, full taste, full nutrition. Well, that is how I see it.

        Interesting that when my daughter visited later that day, she noticed 'something' in the air which set her off coughing/sneezing.
        I had got over my experience of that earlier.
        The chilli is a lot stronger than any store bought stuff I have.

        I have pulled all plants bar the one that is still vital and flourishing. That fruit will be stored as is, maybe some in oil?

            I made (canned) tomato soup on Wednesday evening.
            A can of world famous in NZ Watties (Heinz bought them out) condensed stuff. A bit spicy although not much.
            So, in my wisdom and seeking some experience of the Habanero chilli, I added a tad.
            My god, what a result? I could only manage half a bowl lol. It certainly lit up my night; I swear that if I had turned the lights out, I would have lit up the room 😁.
            The rest is in the refrigerator, waiting for Saturday when I will use it as a sauce to accompany a delicious fillet of Snapper and home made chips (fries).

            Question; should I remove the plants and start afresh next season, or cut the plants back and allow them to regrow after Winter?
