Here you go: Slow Cooker Onion Soup

        Ingredients
        • 1/4 cup unsalted butter, melted
        • 6 thyme sprigs
        • 1 bay leaf
        • 5 lb. large sweet onions, vertically sliced (about 16 cups)
        • 2 tsp. sugar
        • 6 cups unsalted beef stock
        • 2 Tb. red wine vinegar
        • 1 1/2 tsp. kosher salt
        • 1 tsp. black pepper
        • 1/2 cup dry sherry (optional)
        • Sliced whole-grain French bread baguette
        • 5 ounces Gruyère cheese, shredded (about 1 1/4 cups)
        Directions
        1. Place butter, thyme, and bay leaf in the bottom of a 6-quart electric slow cooker. Add onions and stir to coat with butter; sprinkle with sugar. Cover and cook on HIGH for 9 hours. Check at 8 hours to be sure it is not burning.
        2. Remove thyme and bay leaf; discard. Add stock, vinegar, salt, and pepper; cook, covered, on HIGH for 45 minutes. Stir in sherry.
        3. Preheat broiler to high.
        4. Toast 1/2” rounds of the baguette until golden.
        5. Place 1 cup soup in each of 12 (8-ounce) ramekins or ovenproof bowls, or follow freezing instructions.
        6. Top each serving with 2-3 bread slices and about 3 tablespoons cheese. Place 6 ramekins on a jelly-roll pan; broil 3 minutes or until cheese melts and begins to brown. Repeat procedure with remaining 6 ramekins, bread slices, and cheese.

Notes: If you don’t plan to eat it all, freeze the soup in a bowl rather than laying it flat, so it will fit in a saucepan or ramekin when it's time to thaw.

So much easier than sitting at the stove for 45 minutes stirring the onions to get them carmelized! (KLD)

I love soups too, veggie soup and chicken soup are my go-to favorites as they are easy to search online.
