    Sardinia or Crab cake recipe



    1. In a small bowl. 1/2 tsp. Old Bay seasoning, 1/4 cup bread crumbs
    1 tsp. lemon pepper 1 tsp. parsley. Set aside.

    2. In a large bowl, lightly beat 2 eggs 150c. Add 2 tbsp. mayonnaise,
    Sliced Pimentos, 4 oz and 2 tsp. Worcestershire
    to the large bowl and whisk until combined.
    Add the dry ingredients (Step 1) to the large bowl and stir to mix well.

    3. Add the sardines Gently fold the meat into the other ingredients with a
    large spoon, being careful not to break up individual pieces.

    4. Cover tightly with a double layer of plastic wrap and refrigerate for 3 hrs.

    5. Shape 4 patties. Press bread crumbs to coat. When in an iron frying pan fry until
    lightly browned, gently turning once.

    You can substitue 16 oz. lump crab meat with 4 tbs. relish.
    Makes 4 to 6 cakes
