We are well into fall and the tomato harvest continues as does preserving the tomatoes for use during winter.
NL thought she had made just about enough Italian sauce. So she tried Mexican sauce with onions, jalapeno and poblano chiles, a touch of chipotle, cumin, and coriander. It made a great roast chicken enchilada. The rest of the sauce will be frozen in quart plastic bags.
