  • Porterhouse Chops and Veggies

    Time to break in the new kettle! 2 thick porterhouse chops, seasoned with EVOO, garlic, salt and pepper.
    Lump and one piece of apple wood. Smoked the chops for 30 minutes, removed for a rest and a sear at the end.

    15 minutes into the cook I added 2 cored tomatoes seasoned the same as the chops.

    Added zucchini and squash seasoned the same.
    ['i6;
    Added mozzarella and parmesean cheese and Italian seasoning to the tomatoes and removed the chops to rest before the sear.

    Cranked the heat for a quick sear 4 minutes per side for the chops.

    Dinner is ready.

    Looks over-cooked. Steaks are way too fat.
    Donnie: Dr. Xiao, What are your thoughts on a cure/combination therapy for SCI's??
    CG Xiao: Donnie, I don't want to disappoint you, but I think it is impossible to restore the continuity of the cord or "bridge the gap" in the near future, let's say: 50 years. Dr Wise Young has been my most respected scientist in SCI. He has dedicated and contributed to SCI no other can match.

        Huh? Would you mind elaborating, your response is hard to understand other than the over cooked portion. Guess you can't see the pink in the meat....

          Yes," pink in the meat", that's the way to go. Finally got my wife to realize, the less pink, the more tender it is. Now she gets med rare, me a finely pinked blood rare. If it moves,or moo's, or bleeds when I put the fork to it, it's good.

            dont worry about it larry, you're a master at grilling. You could find a way to make a shoe box look good even for people that don't eat meat
