    Asiago Cheese Mashed Red Potatoes Recipe

    Asiago Cheese Mashed Red Potatoes

    Ingredients

    • 1 1/2 pounds red potatoes
    • 5 ounces Asiago Cheese
    • 4 cloves garlic
    • 1/2 cup heavy whipping cream
    • 1/4 teaspoon pepper
    • 1/4 teaspoon salt


    Directions

    1. Scrub the potatoes with an abrasive plastic pad reserved for vegetables, and rinse. Cube the potatoes.
    2. Place the potatoes and garlic in a large saucepan covered with water. Bring to a boil over medium-high heat. Reduce heat, cover and cook for 15-20 minutes or until tender.
    3. Drain and transfer to a mixing bowl and mash.
    4. Add the Asiago cheese, cream, salt and pepper, mix until desired texture.

    This has been one of my favourite recipes recently. The sharp cheese flavor mixes with the cream to create almost a cheesy roué effect. It also has great calorie value considering the potato starch.

    You might be able to substitute another cheese such as cheddar. but asiago has a particular texture that works well.
