So it's getting cooler, closer to good weather for chili.
So here's a recipe
Pretty good Easy Chili
2 1/2 lbs ground chuck
1 large onion, chopped fine
2 28 oz cans whole tomatoes
1 6 oz can tomato paste
1 green or other color bell pepper, diced (optional)
8 oz mushrooms, sliced thinly (optional)
salt
chili powder to taste
1 16 oz can dark red chile beans (optional)
1 Brown meat & onion.
2 Pour off grease.
3 Add tomatoes (squished) & tomato paste.
4 Add green pepper and mushrooms if desired.
5 Add chile powder & salt to taste (takes quite a bit of chili powder).
6 Cook covered for 1 hour.
7 Add beans.
8 Cook covered 1/2 hour.
Cooking Tips
If it's at all greasy, rinse with hot water when draining off fat.
Freezes very well.
